Simple French Style Potato Salad

There are so many ways to make a delicious potato salad and each country, even down to the smallest region have a different interpretation of what the perfect kind of potato salad should look like. Some like to keep it really simple while others go all out and add a whole list of ingredients to this classic dish.

I seem to like the simpler way more, like most of my cooking. The simpler the better, because even though I love to cook I don’t like to spend hours in the kitchen.

And this French-style interpretation of a classic potato salad with my way of keeping things simple. Using just a few ingredients that are cupboard staples and lots of fresh herbs to make this classic dish a feast for all senses.

INGREDIENTS

500g new potatoes
half of a red onion 
2 tsp kapers
25g parsley
25g dill
2 tbsp white wine vinegar 
65 ml extra vigin olive oil
2 tsp dijion mustard
1/4 tsp ground coriander 

DIRECTIONS

1. Wash and slice the potatoes into half a centimetre thick slices. 

2. Place potatoes in a pot and add watered salt and boil for 7-10 minutes until tender.

3. In the meantime make the vinaigrette by adding the vinegar, olive oil, mustard and ground coriander in a small bowl and whisk until well-combined.

4. When potatoes are ready, remove from heat and drain. Place potatoes on a tray or large bowl and immediately add the vinaigrette (while potatoes are warm), toss to coat.  Let potatoes sit for 10 minutes until all the flavour from the vinaigrette has melted into the potatoes.

5. Chop red onions and fresh herbs very finely and add together with the capers to the potato salad. Toss gently to combine.

6. Transfer the potato salad to a serving dish and serve as a side salad for a lovely summer BBQ
